Sunshine on a Gloomy Day

Yesterday was a beautiful and abnormally warm February day here in Southern Minnesota.  It made me anxious for spring and the sunshine.  Of course this morning, a front moved in, bringing dark clouds and sleet.  The gloomy skies started giving me a gloomy mood, so it was time to bring a little sunshine back.

My Hawaiian Chicken Pasta Salad hits the spot when you’re yearning for a fresh tasting meal! This salad is filled with a citrus taste and a hint of garlic and curry! Give the recipe below a try and bring in the sunshine!

Ingredients:

1 Cooked Chicken Breast

1 (8 oz.) Can Pineapple, save juice for the dressing **You can always use more pineapple if you’d like!

1 (11 oz.) Can Mandarin Oranges (Juices drained)

3 Cups Cooked Elbow Pasta

Dressing Ingredients:

1 Cup Mayonnaise

¼ Tsp Curry Powder

¼ Tsp Garlic Powder

Juice from the 8 oz. can of Pineapple

Directions:

  1. Dice or Shred the cooked chicken breast.
  2. Mix the chicken, pineapple, mandarin oranges, and pasta.
  3. In a separate bowl, mix together the mayonnaise, curry powder, garlic powder, and juice from the can of pineapple.
  4. Whisk the dressing until all ingredients are combined smoothly.
  5. Stir the dressing in with the rest of the ingredients.
  6. Chill until served and enjoy!

Strength…Determination…Courage…We are Women

     Today’s post is for all women out there.  I have found myself grasping for inspiration these days.  Hoping that words of wisdom from others will heal this broken heart.  I’m still looking for the magic cure, but in my search I have found that there are all forms of broken hearts.  If you are feeling lonely, defeated, betrayed, or hopeless for any reason, you are not alone. But also remember you have every right to feel this way! Just because others are broken hearted, doesn’t mean you need to suck it up, it’s alright to feel the hurt, because from the hurt we grow.  

     Whatever you feel remember that We Are Women. We are made of more than just sugar and spice.  God gave us Strength, Determination, and Courage.  It is inside of us, we do not need to look to others for it.  So through the loneliness, defeat, betrayal, and hopelessness, remember that You, yes You reading this very post, have Strength…You have Determination… and You have Courage to get through this crazy, beautiful life.

A Blizzard, a Podcast, and a Cup of Coffee

Winter here in Minnesota would be a disappointment without a good blizzard.  I know there are many who beg to differ, but today I found joy in the sounds of the wind and snow, and the silence closed roads offered.  Anyone who knows my family knows that we are weather lovers.  My mom is known as a weather guru by her friends and co-workers and has the uncanny ability to be spot on with her weather forecasts! She knew this blizzard would not disappoint us!

I enjoyed the snowy afternoon by going to our town bar and grill for lunch (they graciously stayed open for those of us wanting to get out), and then trudged back home in the snow to curl up with a cup of coffee and listen to my favorite podcast The Black Tapes produced by Pacific Northwest Stories.  If you haven’t jumped on the podcast band wagon, I encourage you to start by listening to this podcast.  Especially if you’re a fan of X-Files, thrillers, mysteries, or anything that keeps you on the edge of your seat! I hadn’t listened to any podcasts until November when my oldest brother introduced me to The Black Tapes, I was instantly hooked. I curled up in my bedroom with a cup of coffee, the snow falling outside my big window, and pressed the play button to instantly be soaked into the mysterious ere that comes with this podcast.
